- 2 lb. sausage meat (ground, I used 1 lb. spicy and 1 lb. sweet)
- 1 1/2 cups Italian bread crumbs (plus 1/2 cup)
- 2 large eggs
- 1/4 cup fresh parsley, chopped
- 1 lemon (zest)
- 1/4 tsp. freshly ground nutmeg
- 1 clove garlic (minced)
- 1 tsp. sea salt
- 1/2 tsp. fresh cracked black pepper
- 1/3 cup flour
- vegetable oil (for frying)
- 1 lb. mozzarella cheese (grated)
- Parmesan cheese (grated)
