- 1 1/2 tsp. wheat germ
- 1 1/2 tsp. honey
- 1 Tbsp. kosher salt
- olive oil (for greasing the bowl)
- 4 oz. sausage (fennel, or bulk italian sausage of your choice)
- 1 Tbsp. extra-virgin olive oil
- 1/4 cup heavy whipping cream (whipped to soft peaks)
- 1 oz. low moisture mozzarella (cut into 1/2 inch cubes)
- 3 scallions (thinly sliced on an extreme bias)
- 1/4 cup red onions (very thinly sliced)
- 1 Tbsp. fennel pollen (optional, but it takes the pizza over the top)
- semolina (for dusting the peel)
- kosher salt
