- 2 limes (juice of)
- 3 Tbsp. white wine vinegar (or cider vinegar)
- 1 clove garlic (grated or finely chopped)
- 1 tsp. oregano (1/3 palmful dry)
- 1 tsp. granulated onion
- 2/3 cup corn oil (or EVOO – Extra Virgin Olive Oil)
- 2 lb. beef sirloin (coarsely ground)
- 2 Tbsp. corn oil (or olive oil)

- 1 Tbsp. chili powder (each, such as Gebhardt’s and coriander)
- 1 Tbsp. ground cumin
- 1 yellow onion (finely chopped, reserve 3 tablespoons for taco sauce)
- 3 cloves garlic (grated or finely chopped)
- 2 jalapeño peppers (finely chopped)
- 1 cup beef stock (or beer)
- 1 bag corn tortilla chips
- 1 1/2 cups cheddar (shredded sharp yellow)
- 1/3 lb. shredded pepper jack cheese
- 1 avocado (small ripe)
- 1 lime
- 1 cup sour cream
- 1 can diced tomatoes and green chilies
- 1 Tbsp. white wine vinegar (or cider vinegar)
- 1 tsp. ground cumin
- 1 bunch cilantro
