- 2 cups black eyed beans (pre-cooked, you may use tinned)
- 1 handful flat-leaf parsley (roughly chopped)
- 1 onion (small, roughly chopped)
- 1 1/2 cups chopped walnuts (coarsely)
- 2 cups breadcrumbs
- 1/4 cup wholemeal flour (or gluten-free flour, such as rice flour)
- 6 slices smoked bacon (vegan, I used Redwoods – or other faux smoked bacon, 4 slices roughly chopped, the other 2 cut lengthways, keep those two and put them aside)
- 2 cloves garlic (chopped)
- 1 tsp. curry
- salt (to taste)
- 1/2 cup corn flakes (processed)
- bread crumbs (conventional golden, for a light coating, I used Paxo)
