- 1 lb. yukon gold potatoes (peeled and cut into 1 inch cubes)

- 1 Spanish onion (large, cut in half, and sliced into thick slices)
- 1 red bell pepper (large, sliced)
- 6 large garlic cloves (thinly sliced)
- 1/4 tsp. red pepper flakes

- 2 bay leaves (small)
- 2 cups tomatoes (strained)
- 1 tsp. habanero hot sauce

We really liked this! I made potatoes and rice to try it over both. We liked it best over rice. Make sure to rinse the fish in water for a least two days. I will make this again!
