Delish....but I added some other herbs to the panko crumbs....
Thyme, less mint as the recipe per our taste, and a touch of ground sage. Plus a bit more ground pepper. Turned out delicious!
I used a Costco Rack...I hardly had to trim..yummy, juicy and tender.
I did brown on both sides for about 4 mins. And then 3 mins...I like them crispy. Dijon just brush d on and pressed panko! Excellent
