- 3 medium eggs
- 1/2 cup buttermilk (or unsweetened drinking yogurt)
- 1 tsp. salt
- 500 grams mussel meat (diced into max 5x5mm pieces)
- 100 grams Chinese sausage (lap xuong, diced into max 5x5mm pieces)
- 4 cloves garlic
- lemon (grated rind of a)
- 1 chilli (large mild, finely diced)
- 1 medium onion
- 1 cup spinach (diced, cooked, and well drained)
- 1/4 cup Parmesan
- 300 grams new potatoes (alternatively a thin skinned potato like Yukon Golds)
- 200 grams broccolini
- 2 red peppers (medium)
- 1 tsp. salt
- 1 tsp. toasted sesame seeds
- 4 cloves garlic (peeled and roughly chopped)
- 1 piece ginger (a thumb sized piece, about 40 g, peeled and roughly chopped)
- 2 Tbsp. lemon juice
- 2 Tbsp. rice vinegar
- 1 Tbsp. sesame oil
- 1/2 cup soy sauce
- 1 Tbsp. miso
- 1 Tbsp. Tahini
