- 200 grams potatoes (peeled and cut into dice roughly 1cm, I like Dutch creams at the moment)
- 750 mL vegetable stock
- 1 bay leaf
- 3 sprigs thyme
- 1 cup cooking liquid (mussel, see method)
- 100 mL cream
- 2 tsp. lemon juice
- 1 pinch paprika (and 1 tbsp chopped chives to serve)
- 2 slices country style bread (crusts removed)
- 50 mL cooking liquid (mussel)
- 50 mL olive oil
