- 3 Tbsp. unsalted butter (divided)
- 1 Tbsp. olive oil
- 1 1/2 lb. mixed mushrooms (cleaned, trimmed and torn into bite size pieces, see suggestions above)
- 2 slices bread (from a large, crusty loaf, I’d use 4 from a smaller loaf)
- 2 cloves garlic (or 1 shallot, minced)
- 1 Tbsp. white wine vinegar (or more to taste, I used 2)
- 1 red chile (fresh, stemmed, seeded and minced or red pepper flakes, to taste)
- coarse salt
- freshly ground black pepper
- 6 oz. greens (chopped fresh, see suggestions above)
- 8 oz. cheese (a good melting, thickly sliced, suggestions above)

This was so delicious. Will definitely make again. I modified all the amounts according to what I had (only 20 oz mushrooms, 2 tbsp butter, 1 tbsp of oil, omitted the chile, 1.5 ciabatta buns for the bread, 4 oz of cheese - all the other amounts remained the same), and also added 7.5 oz of sweet potato. I found there was actually quite a lot of liquid so I wouldn't add more butter or vinegar unless there was more bread to soak it up.
