- 1/2 sweet pepper (a medium, chopped)
- 1/2 medium onion (chopped)
- 1 clove garlic (minced)
- 1/4 cup baking mix (Trim Healthy Mama Baking Blend, my Local Blend, equal parts almond flour, coconut flour, and golden flax meal, or bread crumbs of your choice)
- 4 oz. shredded mozzarella
- 1 oz. shredded cheddar
- 1 egg
- 6 mushrooms (large, mine were palm sized or 12 medium mushrooms)
- 1 pinch salt
- 1/8 tsp. pepper
