- 2 cups onions (; sliced and kept in rings or long strips)
- 4 cups mushrooms (sliced; I recommend Cremini)
- 3 Tbsp. fresh thyme leaves (only)
- kosher salt
- 3 tsp. balsamic vinegar
- 1/4 cup shredded mozzarella cheese (; shredded so it melts faster)
- pastry (or food processor, blender, or you could even use 2 forks)
