- 130 grams mixed mushrooms (I used chestnut, forestiere, shitake and oyster mushrooms, sliced)
- 140 grams leek (sliced)
- 4 sticks asparagus (sliced)
- 2 cloves garlic (sliced)
- 2 Tbsp. olive oil
- 1 handful spinach
- 65 mL white wine
- 150 mL vegetable stock (I personally love Knorr stock pots)
- 1 1/2 Tbsp. double cream
- 2 tsp. salt
- 1/2 black pepper (a tsp. of)
- 1 Tbsp. plain flour
- 150 grams puff pastry (I've used shop-bought pastry)
- 1 egg yolk (for washing the pastry)

This was absolutely fantastic! The fam keeps asking when I'll be making it again. As suggested in the reviews, I subbed the white wine with vinegar and it worked really well.

Did it as a shortcrust pastry pie but appart from that it was a really good recipe!

De-flippin’-lish!!
I replaced the white wine with additional veg stock as I don’t drink alcohol and it was still amazing
