- 6 cups mushroom stock (rich, see recipe below)
- 1 baby spinach (generous handful of)
- 1 rice wine vinegar (splash)
- 3.5 oz. chinese noodles (prepared according to package directions)
- 1/4 head savoy cabbage (thinly sliced)
- 1 handful fresh cilantro
- 1 handful fresh mint leaves
- 1 red chili pepper (Fresh, chopped fine, optional)
- mushrooms (Slow Roasted Crispy, see recipe below)
- 1 1/2 lb. crimini mushrooms (sliced thin and divided, use both the stems and caps)
- olive oil
- sea salt (to taste)
- 6 carrots (cut into coins)
- 1 yellow onion (medium, cut into quarters)
- 4 garlic cloves (crushed)
- 8 cups water
- 4 bay leaves (dried)
- 6 sprigs fresh thyme
- 1 handful flat leaf Italian parsley
- 3 soy sauce (splashes)
