- 8 shallots (large, peeled, halved and thinly sliced lengthwise)
- 6 cloves garlic (sliced)
- 3 Tbsp. fresh thyme
- 1/2 cup dry white wine
- 1/2 cup flat-leaf parsley (packed, chopped)
- 1 lb. whole wheat spaghetti
- grated pecorino
- parmigiano reggiano cheese
- 1/2 cup walnut halves (or peeled hazelnuts, toasted and chopped)
