- 2 carrots (medium, grated)
- 1 zucchini (medium, peeled and chopped)
- 1 red bell pepper (corred and chopped)
- 28 oz. diced tomatoes
- 1 liter vegetable stock
- 5 cups water
- 19 oz. red beans (rinsed and drained)
- 1 tsp. dried oregano
