I recomend using 1 cup of quinoa instead of 1.5. It turned out very good. But I also replaced thyme with basil like other reviewers

Very yummy thought the quinoa didn't cook as well as I thought. Maybe didn't have it hot enough before moving it to summer.

I dehydrated some dried porcini mushrooms and used the broth from it to give it extra mushroomy taste. I also used fresh mushrooms and added extra spinach (never can have enough).
