- 10 cups cornbread (day-old, gluten-free, or bread of choice, cut into one inch cubes)
- 4 Tbsp. extra virgin olive oil (or Earth Balance, more as needed)
- 3/4 lb. wild mushrooms (sliced)
- 4 leeks (white and light green parts only, cut in half and sliced)
- 1 1/2 cups celery (sliced)
- 1 cup diced onion
- 1 cup parsley (diced)
- 2 apples (peeled and diced)
- 2 tsp. fresh thyme (chopped)
- 1 Tbsp. fresh sage (chopped)
- 3 cups vegetable stock (more or less depending on texture)

- 1 cup rice milk (or milk of choice)
- 1 Tbsp. white vinegar
- 2 cups gluten free cornmeal
- 1 Tbsp. baking powder
- 1/2 tsp. baking soda
- 1 tsp. salt
- 2 Tbsp. sugar
- 2 Tbsp. brown sugar (more for a sweeter cornbread)
- 1 cup frozen corn
- 3 Tbsp. oil
- 1/4 cup applesauce
- 1/2 tsp. cayenne (optional)
- 1 Tbsp. fresh rosemary (chopped, optional)
