- 1 cup sweet corn (fresh, or frozen)
- 1 Roma tomato (small dice)
- 1/2 cup chopped fresh cilantro
- 12.3 oz. extra firm silken tofu (package of, drained and crumbled)
- 8 tortillas (I used tortillas that were a blend of white corn and flour)
- vegan cheese (Shredded, to top, I used Follow Your Heart Shredded Mozzarella)
