- 1 brown onion (medium, finely chopped)
- 2 large garlic cloves (finely chopped)
- 1 tsp. fresh ginger (grated)
- 2 tsp. lime juice (freshly squeezed)
- 2 tsp. soy sauce (/tamari *)
- 2 tsp. hoisin sauce
- 2 Tbsp. oyster sauce (* use vegan option if you wish)
- 2 scallions (/green onions the white and some green cut in 1 ½ cm/ ½” slices)
- 1/2 cup water chestnuts (canned, cut in 7mm/¼” cubes)
- 1/2 cup fresh mint leaves (roughly chopped)
- 1/2 cup fresh coriander (/cilantro leaves roughly chopped)
- 1 tsp. roasted sesame oil
- 1 red chilli (long, finely sliced – optional)
- 1/4 cup roasted peanuts (chopped)
