- 1 leek (cleaned and finely diced)
- 1 garlic clove (minced)
- 1 1/2 cups quinoa
- 1/2 cup white wine (optional, otherwise use water)
- 3 cups chicken stock (kept warm, I used a combination)

- ground black pepper (Freshly)
- 1/2 cup Parmesan cheese (plus additional for garnish)
- flat leaf parsley (for garnish, optional)
