- 2 Tbsp. soy sauce (or tamari to make it gluten free)
- 1 tomato (roughly chopped)
- black pepper (Fresh)
- 15 oz. lite coconut milk
- 1/2 lime (Juice of)
- rice noodles (Cooked, or jasmine rice)
- fresh cilantro
- fresh basil (thai basil if you can find it)
- grilled tofu (seasoned simply with sesame oil, black pepper and salt)
- roasted cashews
- aduki beans (Cooked)
- seitan (Thinly sliced sauteed)
- broccoli (Steamed, or cauliflower)
- bok choy (Finely sliced)
- fresh lime (Extra wedges of)
