- 1 oz. dried shiitake mushrooms (rinsed)
- 8 cups water (filtered)
- 1/4 cup vegetable broth (or water*)
- 1 onion (finely chopped)
- 1 celery stalk (finely chopped)
- 1 carrot (finely chopped)
- 1 lb. mixed mushrooms (I used beech, white and portobello, wiped of grit, and sliced)
- 2 garlic cloves (minced)
- 6 thyme sprigs (fresh)
- 1 rosemary sprig (fresh)
- kosher salt
- freshly ground black pepper
- 1/2 cup Madeira (sweet)
- 1 Tbsp. sherry vinegar
- truffle salt (optional, I omitted)
- 1 dash cayenne pepper (optional)
- 1/2 cup farro (see Note, rinsed)
- 3 cups water (salted)
