- 1 garlic clove (halved)
- 5 Tbsp. extra virgin olive oil
- 1/2 lb. white button mushrooms (fresh, brushed  clean and chopped)
- 1/4 lb. cremini mushrooms (fresh, brushed clean  and chopped)
- 1/4 lb. shiitake mushrooms (fresh, brushed  clean, stems discarded and caps chopped)
- 2 garlic cloves (finely chopped)
- 2 Tbsp. fresh flat leaf parsley (finely chopped, plus  whole leaves for garnish, optional)
- 2 tsp. fresh thyme leaves (or 1/2 tsp. dried  thyme)
- 1/2 tsp. fresh rosemary (minced, or 1/4 tsp. dried  rosemary)
- 1 tsp. coarse salt (plus salt, to taste)
- freshly ground pepper (to taste)
- 1/4 cup oil (drained, packed sun-dried tomatoes,  finely chopped, plus sun-dried tomato slivers  for garnish, optional)
