- 1 lb. mixed mushrooms (your choice, sliced)
- 1 large onion (chopped)
- 2 cloves garlic (finely chopped)
- 1 Tbsp. unbleached all purpose flour
- 1 1/2 cups chicken broth
- 1/2 cup cream (cultured)
- 1 1/2 cups Emmental cheese (grated, or whatever leftover cheese you have)
