- 2 Tbsp. vegetable oil
- 6 cloves garlic (minced)
- 1 onion (small-medium, chopped)
- 4 cups rice (cooked leftover, preferably Jasmine, do not use fresh rice–if you must, cook it an hour in advance and spread it onto a cookie sheet and place in the freezer for 20 minutes)
- 2 sliced mushrooms (good handfuls, I used Beech mushrooms, which are chopped more than sliced)
- 10 oz. frozen broccoli (thawed)
- 10 oz. frozen peas (or fresh equivalent)
- 1 Tbsp. dark soy sauce (Chinese)
- 1 Tbsp. fish sauce
- 2 tsp. dark sesame oil
- 1/4 cup chopped cilantro (plus some sprigs for garnish)
- dipping sauce (Thai sweet hot garlic, for serving)
- 1 lb. ground meat (I used beef; pork or chicken would be more common in Thailand:)
- 1/4 tsp. black peppercorns
- 2 garlic cloves
- 1/4 cup chopped cilantro
- 1 Tbsp. fish sauce
- 1 Tbsp. soy sauce (I used Chinese superior dark soy sauce)
- 1/4 tsp. salt
