- 3 garlic cloves (minced)
- 2 fresh thyme (generous sprigs)
- 1 sage leaf (fresh, minced)
- 1 cup dry red wine (good)
- 2 Tbsp. tomato paste
- 2 cups vegetable broth (good, this is my favorite by far)
- 4 tsp. all-purpose flour
- salt
- pepper
- 2 lb. yukon gold potatoes
- 1 Tbsp. salt (divided)
- 3/4 cup whole milk
- 2 Tbsp. salted butter
- freshly ground black pepper (to taste)
