- 3 red chillies (long, halved lengthways)
- 2 Tbsp. fish sauce
- 4 kaffir lime leaves (torn, plus extra julienned to serve)
- thai basil leaves
- jasmine rice
- ginger
- 35 red chillies (small dried, broken up and soaked in hot water for 2 hours)
- 1/2 tsp. coriander seeds (each, and black peppercorns)
- 10 grams fresh turmeric (coarsely chopped)
- 4 garlic cloves (coarsely chopped)
- 5 grams galangal (coarsely chopped)
- 1 lemongrass stalk (white part only, coarsely chopped)
- 1 shallot (coarsely chopped)
- 2 tsp. shrimp paste (roasted, see note)
- 1 kaffir lime
