- 4 chicken cutlets (about 4 oz. each pounded thin)
- 1 lb. mushrooms
- 1 sweet red pepper (diced)
- 2 cloves garlic (crushed)
- 4 slices mozzarella cheese

Directions
- Heat 1 tsp. olive oil in large skillet. Sprinkle chicken on both sides with salt and pepper.
- Cook chicken 4-5 min, turning halfway through. Remove from skillet and keep warm.
- Add another 1 tblsp. olive oil to skillet. Add mushrooms, red pepper, cook on med-high heat until softened. Stir in garlic, 1/2 tsp salt, and 1/8 tsp ground pepper. Cook for 1 min.
- Return chicken and any accumulated juices to the skillet. Place slice of mozzarella cheese on top of each. Cover and cook on med-low heat until cheese melts, about 1-3 min.
- Spoon mushroom mixture over chicken
