- 3 carrots (peeled)
- 1 lemon
- 1/2 tsp. ground cumin
- 1/8 tsp. coriander seeds (ground)
- 1/4 tsp. sugar
- ground black pepper
- 1 Tbsp. olive oil
- 1 Tbsp. fresh coriander (chopped)

Directions
- Grate the carrots and place them into a bowl. Add the lemon juice and mix well.
- Add the cumin, coriander seeds, sugar, salt and black pepper to a spice grinder or food processor. Add the spice mixture to the carrots.
- Add the olive oil and coriander to the carrots and toss well.
- Cover the bowl with plastic wrap and place it in the refrigerator for 6 hours before serving.
