- 1 yellow onion (large)
- 3 garlic cloves (medium)
- 1 1/2 lb. sweet potatoes (about 2 medium size)
- 1/3 cup dried apricots (chopped)
- 15 oz. chickpeas
- 2 tsp. ground cumin
- 2 tsp. ground coriander
- 1 tsp. turmeric
- 1 tsp. canela
- 1 tsp. dried ground ginger
- 1/4 tsp. red pepper flakes
- 2 Tbsp. extra virgin olive oil
- 1 1/4 tsp. kosher salt (divided)
- freshly ground black pepper
- 15 oz. diced tomatoes
- 1 qt. vegetable broth
- 6 cups baby spinach leaves (loosely packed, chopped if leaves are large)
- 4 Tbsp. lemon juice (1 large lemon)
- 1 handful cilantro (for garnish, optional)
- vegan yogurt (or cashew cream, for serving)
