- 1 leek (cut in half lengthways, rinsed & sliced, or 1 onion chopped)
- 2 cloves garlic (finely chopped)
- 1/2 tsp. ground cumin
- 1/2 tsp. ground coriander
- 1/2 tsp. ground cinnamon
- 1/2 tsp. ground ginger
- 1/4 tsp. grated nutmeg (freshly)
- 1/2 tsp. turmeric
- 1/8 tsp. harissa paste (or chilli flakes, optional)
- 125 mL water
- 1 liter stock
- salt
- black pepper
- 2 Tbsp. fresh lemon juice
- fresh coriander (a handful of chopped, plus extra for garnish)
- 100 grams roasted chestnuts (and/or hazelnuts, chopped)
- 6 Tbsp. toasted sesame seeds
- 2 Tbsp. coriander seeds
- 2 Tbsp. cumin seeds
- 2 Tbsp. freshly ground black pepper
