Delicious, and so colorful. Easy to make. I added some chopped celery because I had some and garnished with lemon,. It was so good. Thanks!

Made this for our family while we were recovering from a cold virus and it was delicious, creamy and flavorful, subbed fresh ginger for dry and topped with olive oí and fresh thyme. Didn’t have tomatoes on hand but didn’t miss them. Looking forward to adding this to our soup rotation!
