- 500 grams butternut squash (roughly half a large one, chopped into thick slices)
- 1 red pepper (sliced)
- 1 aubergine (small, chopped into thick slices)
- 1 red onion (large, chopped into 8 wedges)
- 8 garlic cloves (skin on but well bashed, optional)
- 1 Tbsp. olive oil

- 8 lamb chops (organic, roughly 800g)
- juice (of half a lemon)
- 1 Tbsp. harissa paste (be careful – harissa pastes can vary in heat levels!)
- 1 Tbsp. honey
- 1 Tbsp. olive oil

- 200 grams couscous (Wholewheat, or normal couscous)
- 400 mL boiling water

- 1 Tbsp. rose petals (dried, I used Tesco Ingredients Rose Petals)
- 25 grams pistachio (kernels, roughly chopped)
- 2 Tbsp. flat leaf parsley (roughly chopped)
- 2 Tbsp. fresh coriander (roughly chopped)
