- 3 lemon zest ("x1" long strips of, peel a lemon with a veggie peeler)

- 1 onion (large, halved and sliced into 1/4" thick slices)
- 1 large carrot (peeled and cut lengthwise, then cut crosswise into 1/2" thick half-moon pieces)

- 1 cup cracked green olives (Greek, rinsed, pitted and halved)
