  • 1/2 teaspoon ground black pepper (or to taste)
  • 2 1/2 pounds boned lamb shoulder (trimmed, I've used leg too!, cut into 1 1/2- to 2-inch pieces)
  • 4 tablespoons olive oil (divided)
  • 1 onion (large, finely chopped)
  • 2 tablespoons tomato paste
  • 1 cup red wine (or dark beer)
  • 2 cups chicken broth
  • 1 can chickpeas (garbanzo beans, drained)
  • 1 cup dried apricots (chopped into large chunks, about 5 ounces)
  • 2 plum tomatoes (large, chopped, or use a can of stewed tomatoes, drained and crushed)
  • 2 cinnamon sticks
  • 1 tablespoon peeled fresh ginger (finely minced)
  • 2 teaspoons grated lemon peel (packed)
