  • 3 garlic cloves (minced)
  • 1 teaspoon ground cinnamon

  • 1/2 teaspoon ground allspice
  • 2 teaspoons coarse sea salt
  • 28 ounces diced tomatoes
  • 2 cups cooked chickpeas (see note for cooking instructions)

  • 1/2 cup dried apricots (roughly chopped)
  • 2 cups beef stock (low salt, or water, if you use water you'll need to add a bit more salt to taste)
  • 1 bunch parsley (finely chopped, about 1 cup worth)
  • 2 teaspoons red wine vinegar
