  • 1 cup couscous
  • 1/4 cup slivered almonds (toasted)
  • 1/2 red onion (small, finely chopped)
  • 1 tablespoon lemon juice
  • 1/4 cup chopped cilantro (plus extra leaves, to serve)
  • 2 teaspoons vegetable oil
  • 1 1/2 tablespoons moroccan seasoning
  • 1 teaspoon grated lemon peel
  • 4 white fish fillets (firm, 6 oz each)
  • 1/4 cup plain yogurt (to serve)

    Directions

    1. Place couscous in a medium heatproof bowl; stir in 1 cup boiling water. Cover with plastic wrap. Let stand for 5 mins or until liquid is absorbed. Using a fork, fluff and separate grains. Stir in nuts, onion, lemon juice, cilantro and 1 tsp of the oil.
    2. Meanwhile, combine seasoning, lemon peel and remaining 1 tsp oil in a small bowl. Rub spice mixture over fish. Heat a large nonstick skillet on medium heat. Add fish to pan; cook for 2-3 mins each side or until browned and cooked through.
    3. Spoon couscous onto plates. Top with fish. Serve at once with yogurt and cilantro leaves.
