- 3 red potatoes (medium, unpeeled, washed and cut into 3/4" dice)

- 1/2 cauliflower (large, broken into bite-sized pieces)
- 1 large sweet potato (peeled and cut into 3/4" dice)
- 2 Tbsp. harissa spice mix (can be very spicy, optional)
- 2 cups homemade vegetable broth (or low-sodium brand)
- 1 cup apricots halved (dried)
- 1 cup whole wheat couscous (uncooked)
- 1/4 cup lemon juice
- 1/2 cup cilantro (chopped)
