- 1 1/2 lb. chicken thighs (4-5 thighs, skin on and bone in)

- 1 yellow onion (medium-sized, diced)
- 3 cloves garlic
- 1 Tbsp. fresh ginger (grated)
- 1 Tbsp. harissa
- 1 Tbsp. ground cumin
- 1 1/2 tsp. ground coriander
- 1 tsp. smoked paprika
- 1 tsp. turmeric
- 1/2 tsp. cayenne pepper (more or less to taste)
- 1 1/2 cups chicken broth
- 1/2 cup beer (I used an IPA)
- 3/4 cup green olives
- 1 tsp. cornstarch (mixed with 2 teaspoons of water)
- 1 1/2 cups couscous (uncooked)
- 1 Tbsp. fresh cilantro (chopped)
