- 2 bone-in chicken breast halves (with the skin left on, each half cut crosswise to total 4 pieces)
- 2 bone in chicken thighs (with the skin left on)
- kosher salt
- freshly ground pepper
- 3 Tbsp. ras el hanout (divided, traditional Moroccan spice blend. Look for it on the spice aisle of the grocery store, or make your own.)
- 2 Tbsp. olive oil
- 1 yellow onion (sliced thinly)
- 1/2 cup dried apricots (halved)
- 8 small potatoes (halved)
- 4 baby carrots (peeled with a bit of the green tops left on if possible)
- 1/2 cup flat leaf parsley (chopped, plus more for garnish)
- 1/2 cup chopped fresh cilantro
- 1 cup green olives
- 3 lemon wedges (preserved, rinsed and pulp removed, or you can also use the peel of 1 lemon)

I added a tablespoon of lemon juice to the chicken for the slow cook. Also added green beans instead of potatoes and used a cast iron skillet. It was a huge hit for us and the kids. Will definitely make this again!

This was the first time ever using my new Dutch oven, and I ruined the meal. I should have known better, but I followed the instructions in the recipe that said cook on medium heat for 1-1.5 hours. Which is TERRIBLE instruction for a Dutch oven (I now know). It burnt severely. The chicken that was near the top of the pot was till ok, so we ate that and it tasted delicious. If I ever make again I will simmer for 1.5 hours.
