Made this in the motor coach, so to minimize clean up, I sauteed the carrots in the "dressing" and then added lemon juice and cinnamon to simmer until al dente. Loved it, although I might reduce the acid next time.

Super easy. I love it! I've made it a few times now and will continue to do so. I occasionally change out the parsley to basil or thyme to make it match the overall flavor of the meal.
