- 1 Tbsp. coconut oil (or oil of choice)
- 2 leeks (large, white and light green parts only, diced)
- 1 bunch carrots (about 1 lb worth Diced)
- 4 cloves garlic (minced)
- 2 tsp. minced ginger (freshly)
- 2 Tbsp. harissa (depending on the brand the spice level with vary. Start with 2 tsp and add more as you go. We ended up using over 3 TBS worth but we like the heat!)
- 5 cups vegetable stock (add more if you like a thinner soup)
- salt
- pepper
- fresh lime juice (Squeeze of)
- cilantro (for garnish, optional)
- 1 1/2 cups chickpeas (cooked, if canned rinsed, drained, and patted dry)
- 2 tsp. ground cumin
- 1 tsp. paprika
- 1 tsp. garlic powder
- 1 pinch fine sea salt
- 2 tsp. coconut oil (or oil of choice)
