- 1 clove garlic (head, for roasting, or you may sub 2 garlic, not roasted)
- 2 Tbsp. coconut oil
- 1 red bell pepper (chopped)
- 4 cups butternut squash (peeled + cubed)
- 1 tsp. spicy curry powder
- 1 tsp. smoked paprika
- 1/2 tsp. cumin
- 1/2 tsp. cinnamon
- 1/2 tsp. cayenne pepper
- 1/2 tsp. fresh thyme (chopped, or 1/4 teaspoon dried)
- 1 oz. coconut milk (I used full fat but lite will work too, 14)
- 2 cups broth (veggie)
- salt
- pepper
- 4 oz. goat cheese (softened + more for topping)
- chopped cilantro
- pistachios
- 1 pomegranate (for topping)

Absolutely delicious as usual from her. For 4 servings Used 650 Grams of frozen pumpkin, and half the water, (but next time should use 900 gram pumpkin and all the water) and just fried the garlic in the pan with the other ingredients. For curry powder I used kerriepoeder and curry madras, 100 gram of goats cheese incl topping, 28 grams of pistachios. I never use coconut due to incredibly high saturated fat, so use low fat coconut drink substitute instead. Followed rest exactly. Served it with robuust. Fabulous! 458 calories per serving my way.
