  • 1 1/4 cups couscous
  • 1 pound ground beef
  • 1 onion (chopped)
  • 2 tablespoons tomato paste
  • 2 tablespoons spice mix (Moroccan)
  • 14 ounces cauliflower (cut into florets, stems chopped)
  • 2 medium zucchini (sliced)
  • 3 cups swiss chard (thinly sliced, white stems removed)

    Directions

    1. Bring 2 cups water to boil in a medium saucepan. Add the couscous. Cover and let stand for 5 mins or until liquid is absorbed. Fluff with a fork. Set aside.
    2. Heat a large deep skillet on high heat. Add the ground beef and cook, stirring to break up lumps, for 5 mins or until browned. Add the onion, tomato paste and spice mix; cook and stir for 3 mins.
    3. Stir in the cauliflower, zucchini and 1 cup water. Bring to a boil. Reduce heat to medium; cover and simmer for 6 mins or until sauce reduces and vegetables are tender. Stir in chard until wilted. Divide couscous among serving bowls. Top with the meat mixture. Serve with yogurt and lemon wedges.
