- 3 onions (roughly chopped)
- 2 Tbsp. olive oil
- 600 mL tomato juice
- 600 mL beef stock
- 2 Tbsp. clear honey
- 350 grams couscous
- 6 Tbsp. extra-virgin olive oil
- 2 lemons
- 600 mL chicken stock
- 4 Tbsp. fresh flat leaf parsley (chopped, and mint)
- 50 grams flaked almonds (toasted)
- sea salt
- freshly ground black pepper
- coriander leaves (optional)
