Good flavor and all the ingredients go well together. A little labor intensive having to grate apples and carrots but worth it in the end. You can spread some cream cheese frosting on top for a carrot cake cupcake! I deducted a star because if you bake for the recommended time you will burn the muffins! Start at 20 min bake time and go from there.
