Delicious and moist! Didn't add nuts (school allergy) or raisins. Instead added a handful of blueberries and lessened the sugar to 3/4 of a cup. Turned out so flavorful!😋

These turned out great. I reduced the amount of sugar by 30% and used unsweetened coconut and they were still sufficiently sweet. Great with a cup of tea.

This is an excellent muffin. It has healthy ingredients. It takes a little time to put together because of shredding, and chopping, however when made at home you can actually taste all of them. So often bakery made items with shedded ingredients don’t taste good because they are shredded so small and are low in quantity. Not this muffin. Even though this muffin has 1 cup of oil, and 1 1/4 cups of sugar I still think it’s healthy. It makes 19 muffins using a size 31 scoop. That’s quite a few. I will make it again.
