- 2 lb. fish fillets (of firm white, such as halibut, swordfish, or cod, rinsed in cold water, pin bones removed, cut into large portions)
- 3 cloves garlic (minced)
- 4 Tbsp. lime juice (or lemon juice)
- salt
- freshly ground black pepper
- extra-virgin olive oil
- 1 cup spring onions (chopped, or 1 medium yellow onion, chopped or sliced)
- 1/4 cup green onions (greens, chopped)
- 1/2 yellow bell pepper (seeded, de-stemmed, chopped or sliced)
- 1/2 red bell pepper (seeded, de-stemmed, chopped or sliced)
- 2 cups tomatoes (chopped, or sliced)
- 1 Tbsp. paprika (Hungarian sweet)
- 1 pinch red pepper flakes
- 1 bunch cilantro (large, chopped with some set aside for garnish, optional)
- 14 oz. coconut milk
- 1 Tbsp. extra-virgin olive oil
- 1/2 onion (chopped)
- 1 clove garlic (minced)
- 1 cup white rice
- 1 3/4 cups boiling water (check your rice package for the appropriate ratio of liquid to rice for the type of rice you are using)
- 1 tsp. salt

Very good! I used veg stock with fish sauce instead of clam juice and because of lockdown- no white wine, but was still fantastic! Served with tagliatelle pasta

Fish stew didn’t sound that appetizing, but I had on over abundance of cod, so I tried this. It was delicious! I followed the direction as is with no substitutions. Unfortunately my picky husband wouldn’t even taste it and went out to pick up wings. His loss.
Update: For the second time I used fresh basal in place of parsley and added a yellow bell pepper because I had it. Once again it was a hit.

It was amazing. I needed to turn a bland fish into an amazing dish and this recipe was the perfect one. I did add shrimp and spinach to it. My family enjoyed and stated to add it my go to meals. Thank you.

Lovely. Used coconut drink in stead of milk to reduce unhealthy fat. Used cod and served with rice as suggested with onion. Used 4 tomatoes, 2 paprika's, 4 spring onion and 1 onion in rice.

Yum. But I always use the recipe as a guide and add way more garlic,spices to taste 😊

Absolutely amazing. It simply melts in my mouth. The complexity of the flavor makes this dish so satisfying! The only thing I recommend is to cook the stew longer than 15 min in the final stage. I left it on medium, not simmer.

Excellent stew with a complex flavor profile, though I added five new potatoes (diced) and a can of red beans to the mix for substance
