- 1 tsp. baking soda
- 3/4 cup low sodium chicken broth
- 2 Tbsp. reduced sodium soy sauce
- 2 Tbsp. oyster sauce
- 1 1/2 Tbsp. brown sugar
- 1 Tbsp. rice wine (Japanese, or dry sherry, see notes in post)
- 1 Tbsp. Asian chili sauce (or Sriracha more or less to taste)
- 1 1/2 tsp. toasted sesame oil
- 1/4 tsp. salt (tsp EACH, pepper plus more to taste)
- 1 Tbsp. cornstarch
- 6 cloves garlic (minced)
- 1 Tbsp. minced ginger
- 8 oz. cremini mushrooms (sliced 1/4-1/2” thick)
- 1 cup sliced carrots (THINLY)
- 1/4 cup green onions (chopped, white parts only)
- 8 oz. bamboo shoots (well drained)
- 8 oz. water chestnuts (sliced, well drained)
- 4 oz. snow peas (ends trimmed)
- 1/2 cup roasted salted peanuts (or cashews)
