- 1 turkey (carcass, leftover from carving a whole turkey, including any leftover drippings or giblets, not the liver if you have them)
- cold water
- 1 yellow onion (medium to large, quartered or cut into thick wedges)
- 2 carrots (roughly chopped, can include tops)
- sprigs fresh parsley (Several sprigs of)
- 2 sprigs thyme (or a teaspoon of dried thyme)
- 1 bay leaf
- 1 celery ribs (roughly chopped and some celery tops)
- 10 peppercorns
- salt
- pepper
- 4 qt. turkey stock (you just made)
- 1 1/2 cups chopped carrots
- 1 1/2 cups onion
- 1 1/2 cups celery
- 3 sprigs fresh parsley (leaves chopped, about 2 to 4 Tbsp)
- garlic (a couple cloves, minced)
- 2 tsp. poultry seasoning
- ground sage
- thyme
- marjoram
- bouillon cube
- 4 cups turkey meat (or more of leftover chopped or shredded cooked)
- salt
- pepper
- 8 oz. egg noodles (or rice, optional, skip egg noodles for gluten-free version)

For the soup I added frozen diced potatoes, frozen red peppers, frozen broccoli florets , diced tomatoes, frozen peas, carrots, celery, onion, chicken bouillon, fresh parsley, poultry seasoning, bay leaf, 4 qts turkey stock, kosher salt and cracked pepper. Added the 8 oz rotini pasta then the left over turkey meat.
Was very tasty and nutritious!!

It was excellent. Followed recipe but did not have sage so I eliminated that herb.

Phenomenal taste! Plenty of broth leftover to freeze for future! I used cilantro vs parsley and cooked just enough egg noodles and added 5 minutes before serving. Used sea salt croutons for an added extra flavor!
